I haven't tried this recipe yet, but I intend to. Why? Two words: Bacon & asparagus. 'Nuff said!
Bacon Wrapped Asparagus
10 spears fresh asparagus, trimmed
1/8 teaspoon pepper
5 bacon strips, halved lengthwise
Place asparagus on a sheet of waxed paper & coat with nonstick cooking spray. Sprinkle with pepper; turn to coat. Wrap a bacon piece around each spear & secure ends with toothpicks. Grill, uncovered, over medium-low heat for about 8-12 minutes or until bacon is crisp, turning occasionally. Discard toothpicks.

Oh man. I made this for my boyfriend's birthday in March. SOO DELICIOUS. However, I'm only allowing myself to make it once a year-- looking forward to his next birthday very much!
ReplyDeleteI still need to try it. Hopefully this week! Annie, did you grill it or make them in the oven?
ReplyDeleteI've done it both ways. Making it in the oven can cause the fat to pool in the baking sheet (unless you do a drip pan). Making it on the grill gives it a nice char but it's not always convenient for me. I like making it in the oven so I can save the fat for future recipes. :]
