Guess what? The soup is insanely easy to make, pretty affordable (certainly more reasonable than $5 per pint!), & delicious. Everyone I have ever given the recipe to raves about it. It's perfect cold weather food, so make a batch soon & enjoy!
Tomato Cheddar Soup
3 t butter
1/2 cup onion, roughly chopped
1 28 oz. can Paradiso brand pear tomatoes in juice, chopped into 1/4" pieces, including all juices (I've used other brands of tomatoes, & they work fine)
1 1/4 cups chicken stock (I've also used vegetable stock & it's fine)
1 1/4 cups water
1/2 cup sour cream
1/4 teaspoon white pepper (come on....I use regular black pepper!)
7 ounces sharp cheddar cheese, grated (sharp is better, but a good quality medium cheddar works fine as well)
salt m& pepper to taste
In a 3 qt saucepan melt butter & saute onions until soft. Add tomatoes & their juices, chicken stock, & water. Bring to a simmer, then remove from heat. Let cool for 10 minutes.
Add 1/2 of the sour cream. Whisk until well blended, then add remaining sour cream. Stir in the pepper & cheese to blend. Salt & pepper to taste. Gently reheat & serve.
Makes 6 cups

Here are a few worth looking at if you're in the market for a GPS:
- Garmin Nuvi 1490LMT $179.99; this is a bit more than many units out there, but it is a 5" screen & includes Bluetooth & Lifetime Map Updates & Traffic, so I think it's still a bargain
- TomTom XL 340TM $119.99; 4.3" screen & Lifetime Map Updates & Traffic
- Magellan RoadMate 3030LM $101.31; 4.7" screen & Lifetime Map Updates
- Garmin nuvi 205W $79.99; 4.3" screen
- Magellan RoadMate 1700 $148.84; 7 " screen (seriously, this seems a bit TOO big if you ask me)
- TomTom XXL 540S $99.73; 5" screen
- Mio Moov R303 $92.95; 3.5" screen (I realize this is a much lesser known brand, but I've only heard good things about the Mio)
There are numerous other discounts that you can use through tomorrow as well. Calendars, photo books, etc. are on sale!

This will be the 15th year I have made this recipe for dinner on Black Friday. I think my husband & I look forward to it more than Thanksgiving dinner itself. It's easy to make, delicious, & is total comfort food. The recipe is in the Better Homes & Gardens New Cookbook. My copy was giving to me when I got married & it appears the edition was even a few years old when I got it, as the copyright states 1989. I have no idea if the newer versions of the cookbook have the recipe in there. Also, technically, the recipe calls for chicken, but I substitute turkey. If you look in your cookbook then, the recipe will be for Chicken Enchiladas.
Now, drum roll please......
8 6 inch tortillas
1/2 cup chopped onion
4 cloves garlic, minced
1 t ground coriander
1/4 t pepper
4 T butter
3 T all purpose flour
1 8 oz. carton sour cream
2 cups chicken broth
1 or 2 canned jalapeno chili peppers, rinsed, seeded, & chopped (I omit this!)
1 cup shredded Monterey Jack cheese (um yeah....I add more!)
2 cups cooked turkey, chopped
sliced black olives (optional)
sliced green onions (optional)
Wrap tortillas in foil & heat in a 350 degree oven for 10-15 minutes or until softened.
For sauce, in a saucepan cook onion, garlic, coriander, & pepper in butter until the onion is tender. Stir flour into sour cream; add to the onion mixture. Stir in broth & chili peppers all at once. Cook & stir until thickened & bubbly. Remove from heat & add 1/2 of the cheese.
For filling, stir 1/2 of the sauce into the turkey. Place about 1/4 cup onto each tortilla; roll up. Arrange seam side down in a lightly greased baking dish (I use 9x13) & top with remaining sauce. Cover with foil & bake for 35 minutes at 350 degrees.
Remove, sprinkle remaining cheese over the enchiladas, & bake for approx. 5 minutes or until the cheese is melted. Sprinkle with olives, green onions, diced tomatoes, etc. as you wish (although I don't use any toppings...they are amazing as is!).

I'm wondering: Is it OK to give an older model as a gift? Or is that tacky? Certain people (like my parents) wouldn't know the difference, so maybe it depends on the recipient. Leave a comment if you have an opinion on this.
Also, if you prefer the Nook, it is a doorbuster item on Friday morning at Best Buy for $99.

One word of advice: Grease the heck out of your slow cooker, because this does like to stick. Also, plan on cooking it longer than the stated time, because it takes a while for the center to fully set (although I think the oval slow cooker helps with that; the round slow cooker seemed worse).
Enjoy Slow Cooker Corn Pudding!

Will you find a lower price for a portable DVD player on Black Friday? Maybe....probably. However, sometimes it's worth it to pay a few bucks more to guarantee you have the item you want. This way you don't have to stand in the cold half the night, too!
Abe's Natural Market has all kinds of options; skin care, food, toys, etc. You will easily find something to spend the voucher on & the items are eco friendly!

If you're unfamiliar with Plastic Jungle, it is an online site that buys & sells gift cards. If you receive a gift card you don't want, you can sell it to Plastic Jungle & then they turn around & resell it. You can also log on & buy a gift card at a lower than retail rate, which is an instant savings for you! I found a $50 Jamba Juice gift card 15% off ($42.50) & a $125 Pier 1 Imports gift card 15% off ($106.25).
Plastic Jungle even has a guarantee in place for buyers that covers the following scenarios:
- The gift card you purchased does not arrive within 2 weeks of the date of purchase.
- Your gift card has a balance less than the listed balance at the time of purchase.
- Your gift card is not authentic or is not valid for use.
If you're going to give a gift card this holiday season, you owe it to yourself to check out Plastic Jungle. Actually, check it out for yourself & see if there are any cards for retailers you frequent. Save money on future purchases by buying a discounted card for yourself!
The holidays are approaching & that means a lot of batteries, so stock up now. These are better for the environment too, because they are rechargeable!

Purchase a $50 voucher to spend at Nordstrom Rack for just $25. You must redeem the voucher by 12/31/10, which is fairly short for a Groupon. Still, if you have a Rack near you, this is a great deal.
I like Donut Shop because it's a nice, mellow blend of coffee. Sometimes you don't want a bold cup of joe & this one is nice & smooth. I just got my order last week & of course....I paid a bit more for it!

Years ago, my friend Teresa came to Thanksgiving at my house because she had no family in Washington. She grew up in the south & made the most amazing sweet potatoes topped with chopped pecans. I begged her for the recipe & have been making them this way ever since. They are totally high calorie but totally delicious. The recipe is hysterical because I wrote it down exactly as she told me, so if you get a giggle out of it, that's why. Enjoy!
Teresa's Sweet Potatoes
- 3 cups sweet potatoes (can use canned or fresh that are cooked & diced)
- 1/2 cup sugar
- 1/2 stick butter
- 1 egg
- 1 teaspoon vanilla
- pinch of salt
Mush all ingredients together & dump into a baking dish.
- 1/2 stick butter (melted)
- 1 cup brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
Mix those 4 ingredients to make a crumble topping & spread over sweet potato mush. Bake at 350 degrees for 20-25 minutes.
- The cards & envelopes are made with 100% post consumer recycled material!
- They plant a tree in honor of every order (kudos for sustainability)!
- They will address & mail them for free (simply pay the postage, they do the rest).
- The cards are very stylish. Really, they are nice & modern...exactly my family's style (I am in love with the card shown above).
Go ahead & consider purchasing this deal from Eversave. You can feel guilt free about sending them since they are made from recycled paper & a new tree will be planted. They offer more than just holiday cards, as well. Birth announcements, invitations, etc. You name it, they likely have it.
Additionally, you can become a Pretty Points member which has lots of perks (free shipping, points earned for all your purchases, bonus deluxe sample, birthday gift, etc.). If you’re gonna buy something, you may as well get free shipping & other bonus items, right?
Lastly, you get the “Let’s Do Lunch” freebie on any purchase, so make it as cheap as you can (unless you really have a specific item in mind). The Curtain Call section is items that are on sale, so pick one of those.
