Today's recipe is one I've been making for about 15 years & we still love it. Plus, it could not be easier to make & it's economical because it only uses a few ingredients. The recipe came from Mr. Food Cooks Chicken, but the book isn't in stock on Amazon anymore. It wasn't on Mr. Food's website either, but you should check the site out here anyway.
So, without further ado, here is Provolone Chicken.
1/2 cup seasoned bread crumbs
2 chicken breasts, split, skinned, boned & flattened
1/2 teaspoon dried oregano (I don't use this, but hey...go for it)
4 sliced provolone cheese
sprig of fresh parsley, chopped (I'll admit I never use this)
1 teaspoon butter or margarine (optional)
Preheat your oven to 425 degrees F. Place the bread crumbs in a shallow dish; press both sides of the chicken into the crumbs. Place the coated chicken in a greased baking dish. Sprinkle with oregano, top with provolone cheese, sprinkle with parsley, & dot with butter if using it. Bake for 15-20 minutes, or until chicken is cooked through.
