Tasty Tuesday

While most people think of cranberries during the fall, I love them all year round. This recipe is super easy, yummy, & uses your slow cooker, which is nice on a hot day. I got it from this book & have made it several times.

Cranberry Pork Roast

  • 3-4 lb pork roast
  • salt & pepper to taste
  • 1 cup finely chopped cranberries (or use 1 can cranberry sauce)
  • 1/4 cup honey
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon ground cloves (optional)

Sprinkle roast with salt & pepper. Place in slow cooker. Combine remaining ingredients & pour over roast. Cover & Cook on low 6-8 hours, or until meat is tender.

  1. I made this one time before when I had cans of cranberries I needed to use up. My dd2 who doesn't normally like cranberries loved it. She was just last week asking if I could make it again.

  2. It is a great way to use up those extra cans of cranberry sauce. I always seem to buy too many at the holidays!
