Do you see that ooey, gooey goodness in the photo above? Yep, that's today's recipe & it's one your kids are sure to love! In fact, my daughter got the recipe from her cooking class at Young Chef's Academy. Sadly, they are no longer in business in Washington, but if you have a YCA near you, I highly recommend them for both their cooking classes & their birthday parties.
OK, on to the recipe. Modify this by adding whatever ingredients you typically like on your pizza. Dice up some veggies in tiny pieces & add them to the ground beef or mix them in the sauce & your kids won't even know but they'll still get some vegetables (sshhhh...don't tell!). It's fun for the kids to make, they'll eat it, & it's a quick, easy dinner. What's not to love?!
Pizza in a Cup
1 can refrigerated biscuits (1o ct)
1 cup ground beef, cooked & crumbled
1 small can tomato sauce with herbs & garlic
1/2 cup mozzarella cheese, shredded
Preheat your oven to 375 degrees F. Lightly spray muffin tin with cooking spray. Evenly press each biscuit in the bottom & up the sides of each cup.
Spoon ground beef into prepared muffin cups. Add 1/2 tablespoon of sauce over each cup. Bake 15 minutes.
Sprinkle with cheese & bake an additional 5 minutes, or until the cheese is melted & the biscuits are golden. Let stand for 5 minutes & gently removed cups from the muffin tin. Makes 10 cups.
